Colombia is one of the largest producers of coffee in the world along with Brazil. The weather and topography mixed with the botanical origin of the species leads to a perfect precursor of what is need for a perfect cup of coffee. Colombia has a rich history into coffee and is home to one of the largest coffee research centers in the world.
Colombia is known for producing high quality high scoring cups of coffee. It has a medium acidity and strong clean body. It works well in blending with other origins such as Brazil.
The Colombian coffee we use is an Organic Fair Trade product grown on a large farm coop of 347 hectare or roughly 700 acre farm. Coffee is depulped with a traditional depulper and zaranda (a mesh screen used after depulping to separate low-quality beans), fermented dry, and dried in parabolic dryers and casas elba (a sun dryer with retractable roof, normally built on top of the producer’s house.
